Village Salad
Country: AkrotiriCourse: Salads
Ingredients
- 2 tomatoes
- 1 medium cucumber, peeled
- 1/2 small red onion, thinly sliced
- 1/4 cup feta cheese
- 1/2 cup whole kalamata olive, pitted
- 1 tablespoon chopped fresh parsley
- 2 tablespoons olive oil
- 1 teaspoon oregano
- 1 tablespoon lemon juice
- 1 tablespoon white wine vinegar
Directions:
- Cut the tomatoes into wedges and layer in the bottom of a glass bowl.
- Slice the cucumber and layer on top of the tomatoes.
- Top with thinly sliced red onion, feta, olives and parsley.
- Whisk the remaining ingredients together and pour on the salad.
