Enguinar (Stewed Artichokes)
Country: ArmeniaCourse: Sides
Makes: 4 servings
Ingredients
- 4 medium artichokes
- 2 large onions, sliced thin
- 1 teaspoon dried dill
- 1 teaspoon parsley
- 1 (15 ounce) can tomato sauce
- 1/2 cup water
- 2 tablespoons lemon juice
- salt and pepper
Directions:
- First cook the onions in the water until they become soft. Then add the remaining ingredients and stir.
- Add the artichokes to the pot and simmer covered, stirring occasionally, for 35 to 45 minutes, or until the artichokes are tender.
