Australian Chips
Country: AustraliaCourse: Sides
Makes: 4 to 6 servings
Ingredients:
- 6 medium sized red potatoes (the Australian recipe called for Désirée potatoes)
- 3 cups vegetable oil
- Sea salt to taste
Directions:
- Slice the potatoes to a uniform thickness so they will cook at the same speed. If you do this in advance, you can stop them getting brown by submerging them in ice water until they are ready for frying.
- Heat the oil. You can tell when your oil is hot enough by sticking the non-stirring end of a wooden spoon into it. If bubbles rise up the wood, the oil is ready.
- Pat the potato slices with a paper towel to soak up some of the excess moisture, then dump them in the oil. Be sure to stir them around for a couple of minutes or they will stick to each other and they won't cook correctly.
- When the fries are a golden brown, take them out. Using another paper towel, remove some of the excess oil and add the sea salt.
