Sushi Rice

Makes: 2 generous servings



Ingredients:

  • 1 cup sushi or short grain rice
  • 1 cup water
  • 1 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 1/2 tsp kosher salt

Directions:

  1. Rinse the rice in a fine mesh strainer until the water runs clear.
  2. Put the rice and the water in a small saucepan and turn on the heat. Bring to a boil, then cover and reduce heat to low. Simmer for 15 minutes, then remove from the heat and, without taking the lid off, let stand for 10 minutes.
  3. Mix the vinegar with the sugar and salt. You can use a small saucepan to heat the mixture, or you can just pop it into the microwave for 20 or 25 seconds.
  4. Transfer the rice to a bowl and pour the vinegar mixture over it. Mix thoroughly. Make sure that the vinegar/sugar/salt mixture covers each grain of rice.
  5. Let the rice stand until it reaches room temperature.
