Cayman Style Fish

Ingredients:

  • 1 lb fish fillets, of about 3/4 to 1 inch thickness (mahi mahi, snapper or grouper)
  • 2 tbsp lime juice
  • 1 cup water
  • 1/2 cup thinly sliced onion
  • 1/2 cup sliced green or red bell peppers
  • 1/2 cup diced tomato
  • 1 tbsp worcestershire sauce
  • 1 tbsp ketchup
  • 1/4 cup butter or margarine

Directions:

  1. Mix 1 tbsp of the lime juice with the water and add the fish filets and salt and pepper. Let marinade for 15 minutes, then remove and pat dry.
  2. Heat 2 tbsp of the butter over moderately high heat until it foams and then subsides a little. Add the fish and cook 1 to 2 minutes on each side.
  3. Remove and set aside.
  4. Add butter to the pan if needed and cook the onion and bell pepper until soft. Now add the tomato, Worcestershire sauce, ketchup and the rest of the lime juice.
  5. Simmer for 2 minutes or so, or until the flavors have blended.
  6. Pour the sauce over the fish and serve.
