Chad Salad
Country: ChadCourse: Side
Makes: 4-6 servings
Ingredients:
- 3/4 cup long grain brown rice
- 1 small cucumber, sliced
- 2 bananas, sliced
- 1/2 cup raisins
- 2 tbsp chopped almonds
- 1/4 cup olive oil
- 2 tbsp lemon juice
- Zest of 1 lemon
- 1 tsp salt
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp cayenne pepper
- 1 tsp honey
Directions:
- Cook the brown rice, then drain and rinse.
- Mix the oil with the lemon juice, zest, spices and honey.
- Combine the rice with the cucumber, bananas, raisins and almonds and pour the dressing over.
- Stir gently to combine. Cover and chill for 30 minutes before serving.
