Pommes Salardaises (Potatoes in Duck Fat)

  • 2 lb Yukon gold potatoes
  • 1/4 cup duck fat
  • 3 cloves garlic, minced
  • 2 tbsp Italian parsley, chopped
  • Salt and pepper to taste


  1. Preheat oven to 425 degrees. Melt the duck fat in an oven-proof skillet and cook the potatoes until they are nicely browned on both sides. Season with salt and pepper.
  2. Transfer to the oven and bake for 10 minutes or so, checking to make sure they don't over-brown.
  3. Return the skillet to the stove and add the parsley and garlic. Stir until for two or three minutes until the garlic softens.
