Pommes Salardaises (Potatoes in Duck Fat)
Country: Champagne-Ardenne, FranceCourse: Side
Makes: 4-6 servings
Ingredients:
- 2 lb Yukon gold potatoes
- 1/4 cup duck fat
- 3 cloves garlic, minced
- 2 tbsp Italian parsley, chopped
- Salt and pepper to taste
Directions:
- Preheat oven to 425 degrees. Melt the duck fat in an oven-proof skillet and cook the potatoes until they are nicely browned on both sides. Season with salt and pepper.
- Transfer to the oven and bake for 10 minutes or so, checking to make sure they don't over-brown.
- Return the skillet to the stove and add the parsley and garlic. Stir until for two or three minutes until the garlic softens.
