Cajeta De Coco (Coconut Fudge)
Country: Costa RicaCourse: Dessert
Makes: 20 to 30 pieces
Ingredients:
- 2 cups sweetened condensed milk
- 1 cup fresh coconut, shredded
- 1 cup butter or 1 cup margarine
- 1/2 cup graham cracker crumbs
- 1/2 tsp vanilla extract
Directions:
- Put all the ingredients in a pot over medium-low heat. Bring to a boil, stirring constantly.
- Keep boiling for about five minutes while continuing to stir. Remove from the heat and let cool.
- Roll into bite-sized balls and place in candy papers. For a firmer texture, chill for a few hours before serving.
