Rødkål (Red Cabbage)

Makes: 6 to 8 servings


  • 1 medium red cabbage, finely shredded
  • 2 tbsp butter
  • 1/2 cup vinegar, lemon juice or pickle juice
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 1/4 cup currant jelly (optional)


  1. Melt the butter in a large pot and add all the rest of the ingredients. Cover and cook on low heat until the cabbage is tender (20 minutes or so).
  2. Remove from heat and stir in the jelly (if using).
