Curtido
Country: El SalvadorCourse: Side
Makes: about 6-8 servings
Ingredients:
- 1/2 head of cabbage, shredded
- 1 carrot, peeled and grated
- 4 cups water
- 1/2 onion, diced
- 1/4 cup white vinegar
- 1 jalapeno or Serrano pepper, minced or 1 tbsp red pepper flakes
- 1/2 tsp salt
Directions:
- Boil the water. Put the cabbage and carrots in a heat-proof container and pour the water over. Let stand for 10 minutes, then drain. Try to get out as much of the water as you can.
- Transfer the cabbage and carrots to a bowl and add the rest of the ingredients. Let stand at room temperature for at least an hour. Chill and serve.
