Makes: about 6-8 servings



Ingredients:

  • 1/2 head of cabbage, shredded
  • 1 carrot, peeled and grated
  • 4 cups water
  • 1/2 onion, diced
  • 1/4 cup white vinegar
  • 1 jalapeno or Serrano pepper, minced or 1 tbsp red pepper flakes
  • 1/2 tsp salt

Directions:

  1. Boil the water. Put the cabbage and carrots in a heat-proof container and pour the water over. Let stand for 10 minutes, then drain. Try to get out as much of the water as you can.
  2. Transfer the cabbage and carrots to a bowl and add the rest of the ingredients. Let stand at room temperature for at least an hour. Chill and serve.
