Salsa Roja

Makes: about 12-18 servings


  • 8 small red tomatoes
  • 1 can peeled, whole tomatoes
  • 1/4 white onion
  • 1/4 green bell pepper
  • 3 or 4 sprigs of cilantro
  • 2 tsp salt
  • 2 to 3 tbsp Caldo de Pollo (chicken bouillon)
  • 2 tbsp oil


  1. Put all the ingredients into a blender and puree until you get a smooth sauce. Transfer to a pot and pour another tbsp of oil over.
  2. Heat over a medium-high flame until boiling, then shut off the heat and keep warm until ready to serve.
