Odrajahu-kohupiimakarask (Estonian Soda Bread)
Country: EstoniaCourse: Bread
Makes: 1 loaf
Ingredients:
- 7 oz ricotta cheese
- 2 tbsp sour cream
- 3/4 cup + 4 1/2 tsp milk
- 1 egg
- 1 1/8 cup barley flour
- 1/2 cup all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tbsp sugar
- 2 tbsp olive oil
Directions:
- Preheat your oven to 400 degrees. Mix the ricotta cheese and sour cream with the milk, egg, salt and sugar. Sift the barley flour and all purpose flour together with the baking soda. Fold the dry mixture into the wet mixture. Now add the oil and combine gently.
- Grease a spring-form cake pan with butter and pour in the batter. Bake for 25 to 30 minutes, or until the bread is golden and a toothpick comes out clean.
