Salad for Center Table

Makes: 6 to 8 servings


  • 3 kinds of lettuce
  • 10 walnuts
  • 3 tbsp pine nuts
  • 1 avocado, diced
  • 1 can of anchovies in olive oil
  • 7 oz goat cheese, diced
  • 6 radishes
  • 2 carrots, grated
  • 1 medium onion, sliced fine
  • 1/4 cup extra virgin olive oil
  • 1/2 cup lemon juice
  • 1/4 cup apple cider vinegar
  • salt to taste


  1. Sprinkle the diced avocado with a little bit of lemon juice to prevent browning. Cut the lettuce up into bite-sized pieces and arrange in the bottom of your bowl. Top with the walnuts, pine nuts, avocado, carrots, cheese, anchovies and red onion.
  2. Cut the radishes into flower shapes and place on top of the salad.
  3. Whisk the oil together with the lemon juice and vinegar. Add the salt and pour over the salad.
