Salad for Center Table
Country: The Falkland IslandsCourse: Side
Makes: 6 to 8 servings
Ingredients:
- 3 kinds of lettuce
- 10 walnuts
- 3 tbsp pine nuts
- 1 avocado, diced
- 1 can of anchovies in olive oil
- 7 oz goat cheese, diced
- 6 radishes
- 2 carrots, grated
- 1 medium onion, sliced fine
- 1/4 cup extra virgin olive oil
- 1/2 cup lemon juice
- 1/4 cup apple cider vinegar
- salt to taste
Directions:
- Sprinkle the diced avocado with a little bit of lemon juice to prevent browning. Cut the lettuce up into bite-sized pieces and arrange in the bottom of your bowl. Top with the walnuts, pine nuts, avocado, carrots, cheese, anchovies and red onion.
- Cut the radishes into flower shapes and place on top of the salad.
- Whisk the oil together with the lemon juice and vinegar. Add the salt and pour over the salad.
