"Scalloped"Potatoes
Country: The Falkland IslandsCourse: Side
Makes: 6 to 12 servings
Ingredients:
- 6 large potatoes, washed, unpeeled
- 1/2 cup olive oil
- 3 or 4 green onions
- 2 cups grated Parmesan cheese
- Coarse salt and freshly ground black pepper
Directions:
- Rub the potato skins with olive oil (this will make them crispy) and add salt, rubbing all over to cover. Bake at 400 degrees for 40 minutes or until the skins are crispy and the flesh is tender.
- Remove from the oven and let cool until you can handle them, then cut them in half lengthwise. Scoop out the insides and transfer to a large bowl. Add the oil, green onions, salt and pepper. Return the potato mixture to the potato skins and top with the cheese.
- Put the potatoes back in the oven and continue to cook until the cheese is melted and just beginning to turn a golden color.
