Rúgbrauð (Dark Rye Bread)
Country: The Faroe IslandsCourse: Bread
Makes: 1 loaf
Ingredients:
- 1 1/2 cups milk or skimmed milk
- 1/4 cups golden syrup
- 2 1/2 tsp active dry yeast
- 2 1/2 tbsp water
- 2/3 tsp salt
- 3 1/4 cup rye flour
- 1 1/8 cup whole grain flour
- 3/4 cup all-purpose flour
Directions:
- Put the milk and the syrup into a pot and heat over a low flame. Do not boil, just heat it to about the temperature of hot chocolate.
- Dissolve the yeast in the water, then add the salt and stir. Let sit for a few minutes. Meanwhile, put the flours in a large bowl and gradually add the milk mixture and the water. Combine until you get a dough. Knead on a floured surface then transfer to a greased loaf pan and let rise until doubled in size. Bake at 350 degrees for 1 to 2 hours or until the top is golden.
