Baked Pineapple and Sweet Potato

Makes: 2 to 4 servings



Ingredients:

  • 2 medium sweet potatoes, boiled until just tender and thickly sliced
  • 1 fresh pineapple, peeled, cored and sliced thin
  • 4 tbsp freshly grated coconut
  • 4 tbsp green onions, chopped
  • Grated cheese (optional)
  • Salt and pepper to taste

Directions:

  1. Preheat your oven to 350 degrees.
  2. Grease a casserole dish and put the sweet potatoes into it. Season with salt and pepper. Add a layer of pineapple and more salt and pepper. Top with the coconut, even more salt and pepper and finally with the green onions. Grate a little bit of cheese on top (if using) but don't go overboard.
  3. Bake for 30 minutes.
