Colombo Powder
Country: French GuianaCourse: Spices
Makes: about 1 cup
Ingredients:
- 1/4 cup uncooked white rice
- 1/4 cup cumin seeds
- 1/4 cup coriander seeds
- 1 tbsp black mustard seeds
- 1 tbsp black peppercorns
- 1 tbsp fenugreek seeds
- 1 teaspoon whole cloves
- 1/4 cup turmeric
Directions:
- Toast the rice in a dry pan until it starts to turn a light golden color. Keep stirring so it doesn't burn.
- Transfer the rice to a bowl and let cool. Meanwhile, put your spices (except the turmeric) into the same dry pan and toast them until fragrant, stirring constantly. Let cool.
- Put the toasted rice and toasted spices into a grinder or a mortar and pestle and process to a fine powder. Add the turmeric.
