Date Squares

Makes: 16 to 24 servings



Ingredients:

  • 1 3/4 cup rolled oats
  • 1 1/2 cups flour
  • 1 cup brown sugar
  • 1 cup soft butter
  • 3/4 tsp baking soda
  • 18 oz pitted dates
  • water
  • 1/2 cup brown sugar

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine the flour with the baking soda, brown sugar and rolled oats.
  3. Now add the butter and mix with your hands until you get a crumbly mixture.
  4. Chop up the dates into a small dice and add to a saucepan with enough water to cover. Add the brown sugar and bring to a boil, then reduce heat and simmer for 10 to 12 minutes or until the mixture is the consistency of jam. Remove from heat and mash. Let cool.
  5. Butter an 8x8 inch baking pan and cover the bottom with half the dough. Now add the dates and top with the remaining dough.
  6. Bake for 20 to 30 minutes, or until the top begins to turn a golden color. Remove from the oven and let cool slightly, then cut into squares and serve.
