Pineapple Banana Cake
Country: GuadeloupeCourse: Dessert
Makes: 1 cake
Ingredients:
- 2 bananas
- 4 pineapple rings
- 6 tbsp salted butter, softened
- 2 eggs
- 2 cups flour
- 1/2 cup brown sugar
- 1/2 cup water
- 1 1/8 tsp active dry yeast
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/2 tsp vanilla extract
Please note that this recipe did not work for me. The eggs were not listed in the original ingredients so I had to guess how many to use. I did not get good results, so please make this at your own risk.
- Preheat your oven 350 degrees.
- Cut up the pineapple. Cream the butter with the sugar then add the eggs.
- Mix the yeast with the flour and water, then add it to the the butter/sugar/eggs. Stir in the bananas and pineapple. Let stand for 1 hour.
- Bake for 45 minutes or until a toothpick inserted in the center comes out clean.

I love international foods and am fascinated by world cuisine and cooking traditions. (Now I just need to get my kids interested, too.)
