Pineapple Banana Cake

  • 2 bananas
  • 4 pineapple rings
  • 6 tbsp salted butter, softened
  • 2 eggs
  • 2 cups flour
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 1 1/8 tsp active dry yeast
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp vanilla extract

Please note that this recipe did not work for me. The eggs were not listed in the original ingredients so I had to guess how many to use. I did not get good results, so please make this at your own risk.

  1. Preheat your oven 350 degrees.
  2. Cut up the pineapple. Cream the butter with the sugar then add the eggs.
  3. Mix the yeast with the flour and water, then add it to the the butter/sugar/eggs. Stir in the bananas and pineapple. Let stand for 1 hour.
  4. Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
