Arroz Guatemalteco

Makes: 6 to 8 servings


  • 2 cups long grain rice
  • 2 tbsp oil
  • 1 cup mixed vegetables (carrots, celery, sweet red peppers, green peas), finely chopped
  • Salt and pepper to taste
  • 4 cups chicken stock


  1. Heat the oil in a heavy pot and add the rice. Stir for a few minutes, until all the grains are coated but don't let them brown.
  2. Add the vegetables, chicken stock and salt and pepper. Bring to a boil, then cover and reduce heat. Simmer for 20 minutes or until all the liquid has been absorbed.
