Gâche Mélée

  • 1 3/4 cup all-purpose flour
  • 2 sticks butter
  • 1 1/2 lb apples, peeled, cored and chopped
  • 1 cup demerara sugar
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/4 tsp British mixed spice*
  • 1/2 cup water
  • 1 tsp salt
  • 1 egg


  1. Preheat your oven to 275 degrees. Mix the flour and the butter with your fingers like you would a pastry dough, until the mixture resembles breadcrumbs.
  2. Add the rest of the dry ingredients and the apple. Mix until the apples are well-coated. Now stir in the egg and water.
  3. Transfer this mixture to a 7-inch square baking pan. Sprinkle with a little extra sugar and then bake for two hours or until golden.
