Makes: 6 to 8 servings



Ingredients:

  • 2 pigs' feet (optional)
  • 2 lbs oxtail
  • 1 cup cassareep
  • 2 red hot peppers
  • 1-inch cinnamon stick
  • 3 whole cloves
  • 2 oz sugar
  • Salt to taste
  • 2 sprigs basil
  • 1 bunch thyme
  • 1 large onion, chopped
  • 3 cloves garlic, chopped

Directions:

  1. Boil the pigs' feet until about half cooked, skimming the surface of the water.
  2. Add the rest of the ingredients and water to cover.
  3. Bring to a boil, then reduce heat and simmer until the meat is tender.
