Pepperpot
Country: GuyanaCourse: Main
Makes: 6 to 8 servings
Ingredients:
- 2 pigs' feet (optional)
- 2 lbs oxtail
- 1 cup cassareep
- 2 red hot peppers
- 1-inch cinnamon stick
- 3 whole cloves
- 2 oz sugar
- Salt to taste
- 2 sprigs basil
- 1 bunch thyme
- 1 large onion, chopped
- 3 cloves garlic, chopped
Directions:
- Boil the pigs' feet until about half cooked, skimming the surface of the water.
- Add the rest of the ingredients and water to cover.
- Bring to a boil, then reduce heat and simmer until the meat is tender.
